Stuffed Poblanos

I make this a lot. It's easy, and good!

I don't roast the poblanos first, I just cut the end almost off, stuff them, and use a toothpick to close them back up.

Stuffing: Spanish rice mixed with chopped fresh jalapenos, raisins (golden or regular), toasted pinenuts, enchilada sauce (kick it up if you want), and ricotta salata cheese.

Stuff. Roast on grill. Pour enchilada sauce over. Eat.

for filling. hers what i use
cook two bonita[ white] yams] in cocnut milk anad abotu 3 tbls grated ginger, when cooked[ like mashed potatoes] resever teh watehr and coconut milk for consistency..
stuff the chilies with mashed yams, dip in eggo white batter adn lighty fry.,
then sevged over a bed of quinoa[ or rice] then pour over chilies a warm mango puree[ can be bought in almost any asian store]. and YUMMY!!!!!!!!!

I mix up a stuffing with microwave rice pilaf, chicken breast pan fried with chopped white onion in MoJo (Goya Foods) Marinate, white Mexican cheese and some Nature' Seasoning to taste. The quantities don't really matter, just mix it up, stuff the pepper and cook it on the grill, turning often till it's blackened.

These babies were meant for meat & cheese.Try ground chuck,mushrooms,& chihuahua cheese.Topped with a tomato based salsa & green chillies and more cheese!.Add spices to personalize it.Im sorry but ive never heard of peanuts or raisins in a pepper! ITS A PEPPER!!
